Christmas Peppernuts

The last time I ate our family’s version of peppernuts, it was in a February that seems very long ago now. Mr. Glad and I were at Pippin’s when she pulled a slab of dough out of the freezer, left over from her Christmas baking. My hands weren’t sticky so it was easy to take pictures that I saved to put with the recipe “someday.” Trying to post every day this month along with Pom Pom has prodded me to make good on promises I’ve made in this regard.

This cookie is a version I cobbled together from the assortment that fill the pages of Peppernuts, Plain and Fancy, given to me at least 20 years ago by my Dutch homeschooler friend Anita.  I just now found my little copy, about 5×6″, on a remote shelf and browsed through it for only the second time. When I first received the book, I was looking for the likeliest of the 26 varied recipes to try, but after traveling from front to back and from Paraguay to Russia and back to Kansas, I decided to take ideas and ingredients from several of them.

I had forgotten until tonight that not all of the varieties in the book are even spicy, like true pfeffernusse are. I found a couple of recipes for White Peppernuts, and ingredients as different as ammonia and lemon, peppermint and fresh coconut. As you can seen from the few pages I have shared, these are true Family Recipes, some of which have unusual sources and have been passed down through many generations.

“Original peppernut recipes probably were copied from the Germans, Dutch and West Prussians when Mennonite families moved about Europe in search of religious freedom. Then, when our grandparents left the Ukraine for America in 1874, they brought this lovely tradition with them, baking peppernuts in their ‘grasshopper ovens’ those early Christmases on the Kansas prairies.”

Some years it can be hard to find fruit-flavored jelly candies in the stores; they are a version of gumdrops, not gummy candies, and aren’t spicy, and it seems their availability is subject to trends. I don’t want to use spice drops because there is already plenty of spice in my recipe. The easiest way to dice the candies is to dust frequently with arrowroot or cornstarch. In the photo down below that is what makes the pieces white.

One year I had a much larger batch of dough than this recipe makes, and I was using it from the freezer for many months after. I didn’t always have time to make “nuts,” so I cut bar-shaped cookies and they were good, too!

CHRISTMAS PEPPERNUTS

½ stick butter, 2 oz.
½ c. honey
1 c. sugar
2 eggs
¼ c. milk
½ T. soda in ½ T. hot water
1 tsp. lemon zest
4 c. white flour
6 oz. diced, fruit-flavored jelly candies
2 c. toasted almonds, chopped
2 tsp. ground star anise
½ tsp. cinnamon
2/3 tsp. ground black pepper
¼ tsp. nutmeg

Mix all, form dough into large “pancakes,” and freeze. While still firm, cut into “nuts” or bars. Bake at 350 degrees 8-10 minutes on greased foil on insulated cookie sheets.
Should be golden brown if you don’t want them cake-y.

For Christmas decor, I give you these lighted redwood trees in my town.

Because at my house, there is a wreath on the front door, and one on the playhouse door, and that’s it! I am so busy planning and packing for a long trip, starting with Christmas at Pearl’s in Wisconsin, that I had no room in my mind or schedule for more than that.

I’m not even baking! Soldier and his family were just here for a couple of days and I found a Sugar Plum Cake from last Christmas in the freezer, to eat for breakfast. It’s a stöllen sort of bread, the recipe for which was handed down from my Aunt Bettie; the grandchildren particularly liked the little colored bits in it.

If I were going to be home this year, I’d certainly find a new cookie recipe in this book which was gifted to me by one of the children:

I don’t think I love Christmas as much as my late husband did, but I enjoyed all the aspects of preparing and shopping better when he was still around. And his voice leading us in carol-singing! Oh yes.

For almost twenty years I’ve been learning about the riches of the Orthodox Church, which include an appreciation for the Incarnation on a level I never found elsewhere. It’s thrilling to focus on Christ’s Nativity this month, but the story of a baby in a manger would become boring after a few years if it were merely a historic event to think about. The soul requires more than thought, more than history, and this holy feast is an event that we can abide in the way the branch abides in the Vine. It makes possible our participating in that Life, in the ever arriving Today.

Tradition is a word that comes up a lot during holiday seasons. Some people find great comfort in keeping customs like baking cookies and visiting Santa, but at the same time try to craft their own individual version of fundamental human personhood. I found this little Facebook posting to be thought-provoking:

Every human being born into this world starts as a traditionalist. What we have, what we begin with, is handed down to us from everyone and everything that has gone before. The rejection of that tradition is not only absurd, it is ungrateful. [Tradition is] also inescapable. We cannot become self-created. What we have is a gift. What we are is revealed as we fulfill that gift.

Be thankful. You are God’s gift to the world.

Happy-making baking.

Cookies! That is to say, baking cookies is happy-making for me. Really, the only time I do it is at Christmastime. It’s a creative project that I can do alone and without any pressure or expectations from anyone else. If I’m successful my cookie platter will have a balance of colors, flavors and textures, and include something for everyone’s taste.

This year Pearl and Maggie got me started – they came for several hours on a Saturday and we made six kinds of what we think of as Christmas cookies. Some were traditional for me, and a couple were new.

One of Maggie’s ideas was to make meringues, and she did that beautifully. I wanted to make some Peppermint Cookies that we have done several years. But we were so busy I forgot to take many pictures.

And I baked a new kind of cookie — Christmas is the only time of year when I take the time to try new cookie recipes — that I found in Fine Cooking magazine: Winter Stöllen Cookies. They were a good bit of work, requiring the chopping of candied and dried fruit, and two kinds of dough that are layered and rolled up jelly-roll fashion. Then you freeze the dough and slice it to bake.

You are supposed to brush the rounds with butter before and after baking, and dust with powdered sugar afterward. I skipped the afterward parts for most of the cookies I made, because I didn’t want them to be too sweet. I also didn’t want to hide the swirl in the middle that was faint to begin with. I don’t know what the purpose was of that layering of dough.

I probably won’t make these again; they are too soft and cake-y for my taste, though I did like the burst of tart cherry flavor. (I see now that the description calls them “tender.”) We’ll see how they rate with the rest of the family.

So much kitchen momentum developed yesterday, I began imagine two or three more recipes I could revive, or try for the first time — but then bedtime arrived. Today tasks like housecleaning are calling me, and late tonight the first of my children will be arriving. But maybe, just maybe, I can squeeze in one more batch….

Tonight is the eve of Theophany/Epiphany, the beginning of the feast. According to some traditions, the wise men will arrive tomorrow, so this will be the last night I have my star in the upstairs window. I wanted to keep it up at least until this day — last year’s burnt out before, I think, and the picture is of the new one that isn’t as clear a signal, but at least it lets the neighbors know that we keep Chrisstar 2014tmas here.

I baked cookies this year, but when the 25th dawned I’d only made five kinds, instead of my usual dozen or so. After Kate arrived on the Second Day of Christmas I made another three batches, and now those are mostly eaten or given away, too. This is the second collection. Clockwise from the left, Chocolate Black Pepper, Peanut Brickle Bars, Apricot Macaroons, Ginger Spice, Walnut Coffee Cookies, and above them, Bizcochitos. The Peanut Brickle Bars were a completely new kind, and everyone loved them, so I made a second batch to replenish the stores.

We ate cookies and opened presents in various groupings over the course of a week. During one of the opening sessions Liam cozied up the couch next to me by piling u bears GJ 14p my Christmas bears there; then he settled in. We got to see eight of the twelve grandchildren this Christmas, which was one the best parts.

Soldier and Joy made several beautiful wood-burned signs for gifts; this one below Mr. Glad and I received and put up on the wall right away. Everyone who saw it could join in the feeling it conveyed, and admire the handiwork.

Our Christmas tree this year was such a beautiful tapered shape, thick with branches whose fat needles didn’t dry out. Unfortunately its trunk did not taper, but stayed thick to the top, which made it weigh a ton, and I pulled muscles and sinews in various places just helping Mr. Glad get the tree in and up. We are procrastinating the undoing of that project. I know, it looks like many other Christmas trees, and you can’t see all around it to know what I’m talking about, but I want its picture here anyway. It has so many branches down low, I have had to crawl under every night to water it, and that makes me love it even more.

Pippin often gives me a bird for the tree. This year’s cloisonne edition looks like it should be the king of all, so royally dressed, articulated and brilliant.

At church soicon evergreen decor 14me icons had been decorated with soft conifer branches, making a sort of tent over the image. And my city still had its decorations up last night; the fire department hangs these lights on the coast redwood trees that line the main boulevard. We’ve enjoyed them for 20 years or more, but this is the first year I’ve managed to stop and take their picture.P1120148

Epiphany in the west focuses on the visit of the Magi to the Christ Child, and I think everywhere it is about Light, too. Quoting from this website, “From ancient times this Feast was called the Day of Illumination and the Feast of Lights, since God is Light and has appeared to illumine ‘those who sat in darkness,’ and ‘in the region of the shadow of death’ (Mt.4:16), and to save the fallen race of mankind by grace.”

In the Orthodox Church we commemorate the Baptism of Christ in the Jordan by John the Baptist, when not only was Christ shown to be the Light of the World and the Son of God, but the Holy Trinity was revealed, as our hymn for the feast reminds us with rejoicing:

When You, O Lord were baptized in the Jordan
The worship of the Trinity was made manifest
For the voice of the Father bore witness to You
And called You His beloved Son.
And the Spirit, in the form of a dove,
Confirmed the truthfulness of His word.
O Christ, our God, You have revealed Yourself
And have enlightened the world, glory to You!
