Lenten combo – Spinach Pkhali and Himbasha

It’s been more than ten years since I was learning to make this exotic dish, which is perfect for Lent. My late husband did not keep Lent but he liked it very much, too. He had a hard time believing that there was no sour cream in the mix. I am re-posting the recipe and my notes unchanged since then. I hope I can make at least one batch this year.

The main ingredient is spinach, but the other ingredients in this dish, which can be a vegetable side or a spread for bread or crackers, make it very unusual and in my case, addictive. I know, eating in an uncontrolled manner is the opposite of what Lent is about, but maybe overdoing it on spinach is not as bad as some things. And to reduce temptation, so far I have made sure to take this dish to potlucks where I would be embarrassed to hover over the plate and reveal my piggishness.

The origin of pkhali is the Republic of Georgia. Though I have a Georgian acquaintance at church, I found the recipe on The Traveler’s Lunchbox blog, about a year ago. I’ve made it several times since then, at least twice using frozen chopped spinach, and most recently with fresh spinach.

Spinach Pkhali

Pkhali (the ‘kh’ is pronounced as a deep, guttural ‘h’) is a whole class of Georgian vegetable dishes that straddle the line between salad and dip. The constant is the walnut sauce, and the fact that the vegetable is cut very, very finely – almost (but not quite) to a puree. 

Beet pkhali is also very popular, and is often served alongside the spinach; to prepare beets this way, wrap 3 large ones in foil and bake until soft, then peel and finely chop (or pulse in a food processor) before mixing with the sauce. 

If you’d like to substitute frozen spinach in this recipe, I imagine it would work, though I’m not sure about the amount; maybe start with a pound (half a kilo) of the frozen stuff and add more as needed to balance out the flavors. [I used 2 -10 oz. packages, which was a bit much. -GJ]

p.s. After making this again, I’ve decided I like a slightly smaller amount of spinach, to let the flavors of the walnut sauce really shine. Alternatively, you could use the full 2lbs and make one and a half times the sauce.

serves: 4-6 as an hors d’oeuvre or side dish

1.5-2 pounds (.75-1 kilo) fresh spinach, stems removed and washed in several      changes of water
1 cup (100g) walnuts
4 cloves garlic
1/4 teaspoon ground coriander
1/4 teaspoon ground fenugreek
pinch cayenne
1 1/2 tablespoons white wine vinegar, or to taste
1 small onion, minced
3 tablespoons finely-chopped fresh cilantro (coriander)
1 1/2 tablespoons finely-chopped fresh tarragon
salt
pomegranate seeds, for garnish

Bring a large pot of salted water to a boil, add the spinach and cook just until tender, about one minute. Drain well and let cool. When manageable, wrap the spinach in a clean kitchen towel and squeeze until nearly dry. Chop it as finely as possible (don’t use a food processor or blender, which may puree it; it should have texture) and set aside.

In a blender [I used a food processor. -GJ], combine the walnuts, garlic, coriander, fenugreek, cayenne and vinegar. Add 3 tablespoons of warm water and blend until you have a smooth, creamy sauce about the consistency of mayonnaise, adding a little more water if needed to get things moving.

Add the walnut sauce to the spinach and stir until thoroughly blended and smooth. Stir in the minced onion, cilantro and tarragon, and season with salt to taste. Cover and refrigerate for 6 to 8 hours to allow the flavors to blend. Taste again before serving and adjust the salt and vinegar if needed.

To serve, spread the pkhali on a plate and smooth the top with a spatula. With a knife, make a pattern of diamonds in the top, and sprinkle with pomegranate seeds (or, in a pinch, walnut pieces). Serve with bread.

(Me again) Using the fresh vegetable took more time, though boxes of Costco baby spinach make it easy; the result was definitely a refinement of the dish, as it did away with the many pieces of stem that you get in the frozen greens. As to quantities of all the ingredients, they are fairly flexible, and I did a lot of tasting at the end to make sure there was enough salt and spreadability.

The last time I took it to a community dinner, I also brought along a loaf of the Eritrean flatbread called himbasha, which dark-skinned parishioners in flowing white gauze bring to our church dinners every week to pass around in baskets. I always make sure to reach in and tear off a piece.

It was the first time I’d tried making it at my house. My loaf came out a little thick compared to what I think are the best versions I’ve eaten, because I didn’t notice I was supposed to make 2 loaves with the dough, and I put the whole thing into one large skillet. But it was wonderfully chewy and flavorful all the same, and my tasters loved it still warm from the pan with some of the pkhali spread on.

Here is that  recipe from a book I helped to compile, a small collection of international dishes that are cooked and served by members of each ethnic community (we are truly a pan-Orthodox group) for my church’s yearly food festival.
Himbasha
Makes two 12″ round breads
3 pounds flour
2 1/2 teaspoons instant yeast
1 tablespoon sugar
2 tablespoons vegetable oil
4 cups water, at room temperature
1 teaspoon salt
1/2 cup raisins (optional)
1. In a large bowl, whisk together flour, yeast and sugar. Dissolve salt in water. Add oil and water/salt mixture to flour mixture, and mix until you have a stiff dough. Add raisins and mix until incorporated.
2. Cover and let rise at room temperature until doubled in bulk, about 1 hour.
3. Turn dough out onto a lightly floured board. Form into one or two large circles the diameter of your frying pans and up to 1″ thick.
4. Lightly grease electric frying pan or cast iron skillet or paella pan. Heat over medium heat (about 300 degrees on an electric skillet) until a drop of water dances on it. Place dough carefully in pan, cover and cook about 15 minutes, until bottom is golden brown. Turn and cook another 15 minutes. Remove from pan and let cool on wire rack.


And at right, a photo of the last plate of pkhali I accomplished. Pomegranates were not to be found in the supermarkets in March, so I used the walnut option for garnishing.

You can see the little pieces of onion that I hadn’t minced finely enough….I thought they would overwhelm the dish, but no, it was as addictive as ever. Still, I might put the onions in the food processor with the walnuts next time.

Will I have time to make this again during Lent? Probably not — but we spinach lovers don’t need to be fasting to enjoy something so yummy.

From Britain to the the Black Sea….

It is believed by the Orthodox Church that our Lord’s disciple Simon the Zealot was martyred in what is now the Republic of Georgia. I’ve been looking at maps of that world from the first century, but mine is never a systematic study, when I gaze at maps. Rarely do I come away with a clearer idea of geography or topography, or in this case, history. It’s one of those cases of too-muchness, and I no more hope to retain anything in particular than when I enjoy the view of of trees and plants from a hilltop.

After I leave the map I never can visualize where Georgia or the Black Sea are. I should put a map just above my computer monitor, where I could gaze at it more frequently; I might even switch it out for another part of the world every few months.

Did any of you ever see the curriculum called Mapping the World by Heart? I once bought a copy of the original hard copy version for myself, not my children, thinking that I could work on it at least once a week and learn my geography. But no.

What first piqued my interest in the journeys of St. Simon was an article by John Sanidopoulos titled St. Simon the Zealot and Apostle to Georgia, in which he discusses the sources of his name Zealot and also Simon the Canaanite. He might have been the groom at the Marriage at Cana! And he is said to have traveled in Britain. There are photographs in that post of holy sites associated with the saint, like this church in Novy Afon (New Athos).

The article contains no maps, but when I set about refreshing my memory by means of a few, I came across beautiful depictions of different eras, such as this German map below, showing the 12th century in my favorite colors.

The identifying words at left, “Schwarzes Meer” are sweetly evocative of the day I swam in the Black Sea for a few hours when I was 17, near Istanbul somewhere. I wish I had a print of the picture that I took to refer to, but it is indelibly inked on my mind: A brilliant and dark cerulean sea under a cloudless sky; our feet in the warm, clean sand, and my laughing friend Viv, willowy in her swimsuit, with white-blond hair flying in the breeze.

If I ever get back to Turkey, or visit Georgia, I’d like to spend time by the Black Sea again! Whether that happens  or not, it gives me joy to think about the gorgeous places on the earth, and about the many people who have lived out their lives here or there, many of them with faith, all of them by means of God’s multitude of gifts.

Sometimes when I am just walking through my house or garden I am surprised when I notice that here I am, in my place, alive and with work to do, a life to love. God put me here. I exist. Wonders never cease!

Did St. Simon feel this, as he lived out his life, doing God only knows what? There are many sometimes conflicting stories and traditions about him, but when you think of how many years he walked the earth, there had to be at least a few thousand interesting hours and events that no one ever took much account of, which only God and maybe St. Simon remember.

The day set aside for St. Simon the Zealot in particular was back in May, so I am posting this on the day when he is remembered with all of Christ’s apostles. Rejoice, Holy Father Simon!

CHRIST IS RISEN!

It is the theme of the week, “Bright Week” for us Orthodox Christians who struggled and floated through Holy Week while practically living at church. In the ten days starting with Lazarus Saturday and rolling us along through Bright Monday, we had 19 unique services at my parish, including several that were 2-3 hours long. No one participates in all of them, but some people come very close.

Because of frequent changes in the last year as to who can and may sing and chant at which of our services, it fell out that during this Lent and especially Holy Week I had more chanting duties than ever, and all of that reading of Psalms and other prayers contributed to my joy — and fatigue! What time I wasn’t in church in the last twelve days, I gravitated to my bed, or accomplished minimal garden duties.

The service of Matins of Holy Friday, on Thursday evening, is a highlight of the week. Twelve separate Gospel passages are read, seemingly everything written about Christ’s passion. We stand holding candles, and most people sit down after each of the twelve readings for the prayers and hymns that set apart the Gospel passages. The first reading is more than four chapters long: John 13:31 – 18:1. Every year is a little different for me — I’m sure it’s like that for everyone — but whether you are distracted a lot or hardly at all, there is a blessing in just being there in body, and in hearing so many words of Good News, Christ’s willing self-sacrifice for us.

By Friday afternoon we have had three Holy Friday services by which to enter in to the Crucifixion. On Friday evening the services of Holy Saturday begin; Saturday afternoon is the radiant commemoration of Christ’s descent into Hades to free the faithful of the Old Covenant, and His victory over death. The choir leads us in singing “Arise O God; Judge the earth, for Thou shalt have an inheritance among all the nations,” while all over the church people switch out the purple cloths for white.  The Old Testament story of Jonah three days in the belly of the whale is read at this service, because Jonah is seen in the Church as a type of Christ Who was three days in the tomb. It’s just one of fifteen Old Testament readings that are interspersed with two long and exultant hymns.

Afterward we go home to rest and eat a little, before returning a few hours later for the culmination of Great Lent and Holy Week, the celebration of the Holy and Glorious Resurrection of the Lord and Savior Jesus Christ. Parishioners have been taking turns reading the Acts of the Apostles continuously since the end of the afternoon service, and do so right up until the beginning of the Pascha services just before midnight. Then all the lights in the church are turned off, and at midnight:

The Light of Christ’s Resurrection “breaks through” when the priest takes the vigil light from the altar and gives it to the faithful, while singing: “Come receive the light, that is never overtaken by night, and glorify Christ, Who is risen from the dead.”

From there the people process out of the church building, where the Gospel account of the empty tomb is read; verses from Psalm 68 are sung — “Let God arise, let his enemies be scattered; let those who hate him flee from before his face!”; and the famous Paschal hymn is joyously chanted by all: “Christ is risen from the dead, by death trampling down upon death, and to those in the tombs He has granted life.” In this way the Church announces to the entire world the glorious news of the Resurrection. The Festal Midnight Liturgy of Easter is celebrated and the faithful partake of the Eucharist in the “Light of the Resurrection.”

The spiritual striving of the Lenten season and the blessed travel through Holy Week has been accomplished, and thus the Joy of the Resurrection is inexplicably palpable for all who have participated in this grace-filled journey.

We missed so much of this experience last year! It doesn’t break neatly into parts, a couple of which can be torn out of the whole and doled out over the Internet on a screen. But our deprivations made us all the more jubilant and grateful this year for our traditional over-the-top way of celebrating. The Death of Death is surely a reality we want to know in our hearts and lives. Somehow all of these Lenten and Holy Week labors empty us and humble us in mysterious ways to make us able to receive the grace of divine Life that is poured out at Pascha.

I stayed to break the fast with a few others afterward, with cheeses and meat, wine and chocolate, and didn’t get home until 4:00 a.m. Then we were back for Paschal Vespers at 1:00 — such a bright service! We couldn’t have our usual big barbecue this year but a few families stayed to picnic and visit all afternoon, and their children had an egg hunt.

Our bishop was with us on Bright Monday for Divine Liturgy, plus friends and deacons from a “sister parish” nearby. It was interesting how I began that hour of worship with so much verve, but about fifteen minutes in felt the weight of the residual exhaustion pulling me into a chair, where I tried to keep my mind awake, please God, for just a few more minutes!

At the end of Bright Monday’s service several of our men singers treated us, in English, to this Georgian Paschal hymn that has become one of my favorites. It must be getting more popular among the Orthodox worldwide, if the number of YouTube videos compared to last year is any indication. I found so many good versions, from cathedral to country folk to quarantine virtual choir, I am going to share several with you, in English and in Georgian.
