Amazing Lenten Spinach – and Himbasha

AMAZING SPINACH!

The main ingredient is spinach, but the other ingredients in this dish, which can be a vegetable side or a spread for bread or crackers, make it very unusual and in my case, addictive. I know, eating in an uncontrolled manner is the opposite of what Lent is about, but maybe overdoing it on spinach is not as bad as some things. And to reduce temptation, so far I have made sure to take this dish to potlucks where I would be embarrassed to hover over the plate and reveal my piggishness. My husband could not believe that there was no cream cheese in this dish. He likes it very well, too.

The origin of pkhali is the Republic of Georgia. Though I have a Georgian acquaintance at church, I found the recipe on The Traveler’s Lunchbox blog, about a year ago. I’ve made it several times since then, at least twice using frozen chopped spinach, and most recently with fresh spinach.

Spinach Pkhali

Pkhali (the ‘kh’ is pronounced as a deep, guttural ‘h’) is a whole class of Georgian vegetable dishes that straddle the line between salad and dip. The constant is the walnut sauce, and the fact that the vegetable is cut very, very finely – almost (but not quite) to a puree. 

Beet pkhali is also very popular, and is often served alongside the spinach; to prepare beets this way, wrap 3 large ones in foil and bake until soft, then peel and finely chop (or pulse in a food processor) before mixing with the sauce. 

If you’d like to substitute frozen spinach in this recipe, I imagine it would work, though I’m not sure about the amount; maybe start with a pound (half a kilo) of the frozen stuff and add more as needed to balance out the flavors. [I used 2 -10 oz. packages, which was a bit much. -GJ]

p.s. After making this again, I’ve decided I like a slightly smaller amount of spinach, to let the flavors of the walnut sauce really shine. Alternatively, you could use the full 2 pounds and make one and a half times the sauce.

serves: 4-6 as an hors d’oeuvre or side dish

1.5-2 pounds (.75-1 kilo) fresh spinach, stems removed and washed in several      changes of water
1 cup (100g) walnuts
4 cloves garlic
1/4 teaspoon ground coriander
1/4 teaspoon ground fenugreek
pinch cayenne
1 1/2 tablespoons white wine vinegar, or to taste
1 small onion, minced
3 tablespoons finely-chopped fresh cilantro (coriander)
1 1/2 tablespoons finely-chopped fresh tarragon
salt
pomegranate seeds, for garnish

Bring a large pot of salted water to a boil, add the spinach and cook just until tender, about one minute. Drain well and let cool. When manageable, wrap the spinach in a clean kitchen towel and squeeze until nearly dry. Chop it as finely as possible (don’t use a food processor or blender, which may puree it; it should have texture) and set aside.

In a blender [I used a food processor. -GJ], combine the walnuts, garlic, coriander, fenugreek, cayenne and vinegar. Add 3 tablespoons of warm water and blend until you have a smooth, creamy sauce about the consistency of mayonnaise, adding a little more water if needed to get things moving.

Add the walnut sauce to the spinach and stir until thoroughly blended and smooth. Stir in the minced onion, cilantro and tarragon, and season with salt to taste. Cover and refrigerate for 6 to 8 hours to allow the flavors to blend. Taste again before serving and adjust the salt and vinegar if needed.

To serve, spread the pkhali on a plate and smooth the top with a spatula. With a knife, make a pattern of diamonds in the top, and sprinkle with pomegranate seeds (or, in a pinch, walnut pieces). Serve with bread.

(Me again) Using the fresh vegetable took more time, though boxes of Costco baby spinach make it easy; the result was definitely a refinement of the dish, as it did away with the many pieces of stem that you get in the frozen greens. As to quantities of all the ingredients, they are fairly flexible, and I did a lot of tasting at the end to make sure there was enough salt and spreadability.

The last time I took it to a community dinner, I also brought along a loaf of the Eritrean flatbread called himbasha, which dark-skinned parishioners in flowing white gauze bring to our church dinners every week to pass around in baskets. I always make sure to reach in and tear off a piece.

It was the first time I’d tried making it at my house. My loaf came out a little thick compared to what I think are the best versions I’ve eaten, because I didn’t notice I was supposed to make 2 loaves with the dough, and I put the whole thing into one large skillet. But it was wonderfully chewy and flavorful all the same, and my tasters loved it still warm from the pan with some of the pkhali spread on.

Here is that recipe from a book I helped to compile, a small collection of international dishes that are cooked and served by members of each ethnic community (we are truly a pan-Orthodox group) for my church’s yearly food festival. 

Himbasha

Makes two 12″ round breads
3 pounds flour
2 1/2 teaspoons instant yeast
1 tablespoon sugar
2 tablespoons vegetable oil
4 cups water, at room temperature
1 teaspoon salt
1/2 cup raisins (optional)

 

1. In a large bowl, whisk together flour, yeast and sugar. Dissolve salt in water. Add oil and water/salt mixture to flour mixture, and mix until you have a stiff dough. Add raisins and mix until incorporated.

2. Cover and let rise at room temperature until doubled in bulk, about 1 hour.

3. Turn dough out onto a lightly floured board. Form into one or two large circles the diameter of your frying pans and up to 1″ thick.

4. Lightly grease electric frying pan or cast iron skillet or paella pan. Heat over medium heat (about 300 degrees on an electric skillet) until a drop of water dances on it. Place dough carefully in pan, cover and cook about 15 minutes, until bottom is golden brown. Turn and cook another 15 minutes. Remove from pan and let cool on wire rack.

And at right, a photo of the last plate of pkhali I accomplished, served in a pie plate. Pomegranates were not to be found in the supermarkets in March, so I used the walnut option for garnishing.

You can see the little pieces of onion that I hadn’t minced finely enough….I thought they would overwhelm the dish, but no, it was as addictive as ever. Still, I might put the onions in the food processor with the walnuts next time.

Will I have time to make this again during Lent? Probably not — but we spinach lovers don’t need to be fasting to enjoy something so yummy.

Lemony cookies are good any time….


Last week I finished baking the last of the Christmas cookies. Encouraged by the happy eaters of the Lemon-Poppyseed Sandwich Cookies at previous holiday gatherings, this year I had made a double batch, and then ran out of time to complete more than half of them. The remaining dough and filling waited in the fridge until I got back some strength, and a plan for where to send the finished product so that I wouldn’t eat them all myself.

With so many young, even teen-aged, folk around here at Christmas, I expected to see the cookies go faster than they did. But never during the week of feasting did I spy anyone who might vie with me for the Cookie Monster title, and there are certainly no other contenders remaining in this house now. So when I found a willing person to be my delivery man, I sent them to Soldier and Joy.

The recipe (based on this one at Epicurious) starts with sugar cookies that are heavy with poppyseeds and two sources of lemon flavor, and finishes with the crunchy cookies enclosing an also lemony cream cheese filling.

At the epicurious.com site one can read comments from many readers detailing what happened when they tried the recipes, and the various changes that we daring cooks insist on making.

Most people who had made these cookies thought there should be more filling than planned for in the recipe as given, and I also ran out of filling at my first trial, so this year I doubled the cookie part, but tripled the filling. Not that it’s a problem to have leftovers of either. The cookies are wonderful by themselves, and the filling would be awfully nice spread on toast.

The majority of bakers also liked the cookies better after they had sat in the refrigerator and softened up, though the original recipe said to fill them not long before eating to keep the cookies crisp. I prefer them soft, as did most of the people I fed them to. They are good straight from the freezer, too, I found out!

Here is my version with the extra filling, and a couple of other changes, cut in half so that no one has to assemble 60+ cookies to find out if she likes them.

Lemon-Poppyseed Sandwich Cookies
COOKIES
2 3/4 cups all purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup (2 sticks) unsalted butter, room temperature
1 cup sugar
1 large egg
2 tablespoons poppy seeds
4 teaspoons grated lemon peel
1 teaspoon vanilla extract
1 teaspoon lemon extract
FILLING
12 ounces cream cheese, room temperature
1/2 cup sugar
3/4 teaspoon lemon extract
1/2 teaspoon vanilla extract
Preparation
FOR COOKIES:
Mix flour, salt and baking powder in medium bowl. Using electric mixer, beat butter in large bowl until light. Gradually beat in sugar. Beat in egg, then poppy seeds, lemon peel and extracts. Mix in dry ingredients. Gather dough into ball, divide into two parts and flatten each into a disk. Wrap in plastic and chill at least 2 hours. If wrapped well, it will last in the refrigerator over a week.
Preheat oven to 325°F. Butter 2 large baking sheets. Roll out 1 dough disk on floured surface to 1/8-inch thickness. Using 2-inch-diameter cookie cutter, cut out cookies. Arrange cookies 1 inch apart on prepared baking sheets. Gather scraps; reroll and cut out more cookies.
Bake cookies until edges just begin to color, about 18 minutes. (If you use insulated sheets as I did they might take longer.) Cool cookies on sheets 3 minutes, then transfer to racks and cool completely. Repeat rolling, cutting and baking with remaining dough. (Can be made ahead. Store in airtight container at room temperature up to 2 weeks or freeze up to 1 month.)
FOR FILLING:
Beat all ingredients in large bowl until light and fluffy. Spread 2 teaspoons filling over bottom of 1 cookie. Press second cookie, bottom side down, onto filling. Repeat with remaining cookies and filling. (Can be made ahead. Cover and chill.)

Some of the cookies in this later batch are a bit wrinkly, a result of the dough having dried out a little. I did add a few drops of water when I re-rolled the scraps and that helped them look better. But the wrinkly cookies were otherwise fine.

After my last post featuring a photo of lemons, Jody asked how I like to use these fruits. I consider myself a good person to ask, because my father raised not only oranges but lemons, and until a few years ago when someone very stupid — yes, I mean it — took out the two large trees that remained from ten acres of lemon grove, I used to have as many lemons as I wanted for free.

Lately I’ve been using a lot of lemons just to add the juice to hot water for drinking on cold days. But of more elaborate recipes, some that I’ve loved over the years are Lemon Curd, Greek Egg-Lemon Soup, Lemon Chicken, and Lemon Pudding Cake. And now — Lemon-Poppyseed Sandwich Cookies!

Sunshine Bounty

Our neighbor Elizabeth stopped Mr. Glad and me as we were walking past her house and gave us these lemons that she had just picked.

Citrus fruits are like a long-term investment that God makes on our behalf, pouring light and heat into the fruits over several months, then rain for another while, as we work and play through Spring and Summer and Fall.

Then comes the time of year when light is weak and slant. We need extra vitamin C in our diets, and some color in our field of vision. Well, aren’t we lucky. The activity in the account we probably weren’t thinking about bears a dividend of sunshine.

Getting the cookies ready – Christmas

My mother-in-law introduced me to the tradition of having cookies at this season of year, and I have made an obsession out of it. I have been trying to cut back, because often in the last decade there aren’t enough young or thin people around, people who eat cookies with abandon.

But preparing several kinds and stashing them in the freezer has become a tradition, and this year, in anticipation of having many potential appreciators in the house, I have been enjoying baking. There must be some connection to childlikeness there, but I can’t get into thinking too much about it, because the cookies that are in the oven right now might burn while I am philosophizing.

So I will just give you some pictures and recipes for a few of the favorites we have discovered over the years. I wrote before with photos of Neapolitans. They are beautiful cookies and very nice to eat, too!

Bizcochitos

Bizcochitos are the State Cookie of New Mexico. They have anise and cinnamon and crunch, and many local variations.

Chunky Ginger Spice

Chunky Ginger Cookies are full of spice including ginger in the chewy crystalline form.

I have a whole book of Peppernut cookie history and recipes, given to me by a friend many years ago, but I insisted on devising my own recipe, which includes diced fruit-flavored gumdrops and makes cookies that are no bigger than nuts.

A couple of years ago I found Chocolate Macaroons on the Odense website. The only change I made from their recipe is to use extra-large egg whites. The dough seems to me a little runny (even when I tried adding a little extra flour) to be called “paste,” but after sitting in the fridge overnight it was easily rolled into a ball that baked into a nicely shaped cookie. The main ingredient is almond paste, so if you like marzipan you will appreciate them.

This is my last post for Pom Pom‘s Childlike Christmas Party. I’m glad she hosted the party, because it gave me the structure I needed to get any blogging at all done in this busy month. Thank you, Pom Pom!
