Winter food and flowers.

Last night the women’s book group of my parish met at my house to discuss Summer Lightning by Wodehouse, and The Holy Angels by Mother Alexandra. I cooked up two pots of soup, and the other women brought rustic loaves of bread and salad and dessert.

Long ago I had got the idea of Cuban Black Beans from the Laurel’s Kitchen cookbook, and devised a soup with the same name to eat in winter, when the fresh and raw veggies the book’s authors suggested for a topping weren’t available from the garden out back. Now in the era of internet recipes, I discovered several recipes for the soup, and they used a sofrito, added in the last stage of cooking, made up of the peppers, garlic and onion sauteed with olive oil and bacon, topped off with vinegar and spices. This is what my sofrito looked like:

The beans in this case are cooked with ham hocks at the beginning, so it ends up a meaty and flavorful bowl for a winter’s evening. Mine was just the amount of spicy I wanted, but I’m not sure I could replicate that next time, if there is a next time. I had printed out three recipes from online, and concocted a unique stew, using parts of all of them and my old recipe, too. It took two pounds of beans, and I had plenty to send home with a few guests, as well as to put in the freezer. Because we also had Florentine Spinach Soup, which I have posted about before. Overall the women liked the soups very much.

Thanks to our member who enjoys coming up with appropriately themed foods for our meetings, we ate angel food cake last night as well! I hadn’t read the Jeeves book that was discussed, but I did read The Holy Angels, and I plan to share a bit about that soon. We all thought it was a treasure.

This morning I actually took my walk before breakfast — that mostly because I ate breakfast so late. Now that I’m putting a high priority on walking, I need to keep re-setting it at the top of my mental list, so I don’t forget. One of these days I’m sure I will forget, and then (note to self) I’ll need to take a quick spin around the block in the dark, just before bed. I wonder if this is one of those behaviors that becomes a habit if you do it every day for three weeks?

I worked some more on Psalm 89 as I walked, and the beauty of its poetry did not distract me from the startling sights along the way, whose images I have shared here. One line from the Psalm:

So make Thy right hand known to me,
And to them that in their heart
Are instructed in wisdom.

When winter is coming on: Comfort Soup

Last week I made Comfort Soup with lamb instead of beef. I couldn’t find the written recipe fast enough, so I gave up and made a version from memory. And I see, now that I found the recipe, that I had forgotten one of the few ingredients. But the lamb made it superb nonetheless.

This morning I looked here to see if I had ever posted the recipe for this soup that was a mainstay of our menus from the beginning of our family. Though I had mentioned twice the eating of it, it appears I never shared the recipe itself, which I had clipped from Mademoiselle magazine when in high school, and saved in the three-ring binder that I used for all those ideas I hoped to use “someday.”

More than any other product of our kitchen, this recipe was requested by friends to whom we served it, and many of them mention it years later, telling how they continue to make it in their own homes. I wish I had the original magazine clipping, but I think it was becoming unreadable, at which point — I don’t want to say how long ago, because it’s mind-boggling — my oldest, Pearl, wrote out our family’s most recent adaptation, which you can see in the picture. But this is the original:

COMFORT SOUP

1 quart chicken stock
2 boxes frozen chopped spinach
1 # lean ground beef
2/3 c. grated Parmesan cheese
1 egg
ground black pepper

In a soup pot heat chicken stock and add spinach, frozen or thawed. Heat to a simmer (this will take longer if you are defrosting the spinach at the same time) while you make tiny meatballs (about ¾” in diameter) from the ground beef, cheese, and a dash of ground black pepper (which you have first mixed together). When the broth is simmering and the spinach is defrosted, add the meatballs and simmer for 10-15 minutes.  Lightly beat the egg and swirl it around in the soup. Serve.

Serves 2-4. Good with French bread.

I don’t see spinach frozen in boxes anymore. The other day I made my lamb version with a pound of frozen chopped spinach and about a pound and a half of ground lamb. I forgot the egg altogether, and didn’t measure the Parmesan cheese. In the past I have made it with (a lot of!) fresh spinach. It’s very adaptable.

Just now I searched online for Comfort Soup to see if anyone else in the world had used that recipe from the 60’s, but if they did, they haven’t featured it on their website. In the era of food porn, something this “plain” does not have the right features to endear it to cooking site hosts, and there is not even a photo of anything resembling it. You’ll have to make it yourself if you are to experience in better ways than the visual, how Comfort Soup is a winter-warming pot of coziness.

Lenten combo – Spinach Pkhali and Himbasha

It’s been more than ten years since I was learning to make this exotic dish, which is perfect for Lent. My late husband did not keep Lent but he liked it very much, too. He had a hard time believing that there was no sour cream in the mix. I am re-posting the recipe and my notes unchanged since then. I hope I can make at least one batch this year.

The main ingredient is spinach, but the other ingredients in this dish, which can be a vegetable side or a spread for bread or crackers, make it very unusual and in my case, addictive. I know, eating in an uncontrolled manner is the opposite of what Lent is about, but maybe overdoing it on spinach is not as bad as some things. And to reduce temptation, so far I have made sure to take this dish to potlucks where I would be embarrassed to hover over the plate and reveal my piggishness.

The origin of pkhali is the Republic of Georgia. Though I have a Georgian acquaintance at church, I found the recipe on The Traveler’s Lunchbox blog, about a year ago. I’ve made it several times since then, at least twice using frozen chopped spinach, and most recently with fresh spinach.

Spinach Pkhali

Pkhali (the ‘kh’ is pronounced as a deep, guttural ‘h’) is a whole class of Georgian vegetable dishes that straddle the line between salad and dip. The constant is the walnut sauce, and the fact that the vegetable is cut very, very finely – almost (but not quite) to a puree. 

Beet pkhali is also very popular, and is often served alongside the spinach; to prepare beets this way, wrap 3 large ones in foil and bake until soft, then peel and finely chop (or pulse in a food processor) before mixing with the sauce. 

If you’d like to substitute frozen spinach in this recipe, I imagine it would work, though I’m not sure about the amount; maybe start with a pound (half a kilo) of the frozen stuff and add more as needed to balance out the flavors. [I used 2 -10 oz. packages, which was a bit much. -GJ]

p.s. After making this again, I’ve decided I like a slightly smaller amount of spinach, to let the flavors of the walnut sauce really shine. Alternatively, you could use the full 2lbs and make one and a half times the sauce.

serves: 4-6 as an hors d’oeuvre or side dish

1.5-2 pounds (.75-1 kilo) fresh spinach, stems removed and washed in several      changes of water
1 cup (100g) walnuts
4 cloves garlic
1/4 teaspoon ground coriander
1/4 teaspoon ground fenugreek
pinch cayenne
1 1/2 tablespoons white wine vinegar, or to taste
1 small onion, minced
3 tablespoons finely-chopped fresh cilantro (coriander)
1 1/2 tablespoons finely-chopped fresh tarragon
salt
pomegranate seeds, for garnish

Bring a large pot of salted water to a boil, add the spinach and cook just until tender, about one minute. Drain well and let cool. When manageable, wrap the spinach in a clean kitchen towel and squeeze until nearly dry. Chop it as finely as possible (don’t use a food processor or blender, which may puree it; it should have texture) and set aside.

In a blender [I used a food processor. -GJ], combine the walnuts, garlic, coriander, fenugreek, cayenne and vinegar. Add 3 tablespoons of warm water and blend until you have a smooth, creamy sauce about the consistency of mayonnaise, adding a little more water if needed to get things moving.

Add the walnut sauce to the spinach and stir until thoroughly blended and smooth. Stir in the minced onion, cilantro and tarragon, and season with salt to taste. Cover and refrigerate for 6 to 8 hours to allow the flavors to blend. Taste again before serving and adjust the salt and vinegar if needed.

To serve, spread the pkhali on a plate and smooth the top with a spatula. With a knife, make a pattern of diamonds in the top, and sprinkle with pomegranate seeds (or, in a pinch, walnut pieces). Serve with bread.

(Me again) Using the fresh vegetable took more time, though boxes of Costco baby spinach make it easy; the result was definitely a refinement of the dish, as it did away with the many pieces of stem that you get in the frozen greens. As to quantities of all the ingredients, they are fairly flexible, and I did a lot of tasting at the end to make sure there was enough salt and spreadability.

The last time I took it to a community dinner, I also brought along a loaf of the Eritrean flatbread called himbasha, which dark-skinned parishioners in flowing white gauze bring to our church dinners every week to pass around in baskets. I always make sure to reach in and tear off a piece.

It was the first time I’d tried making it at my house. My loaf came out a little thick compared to what I think are the best versions I’ve eaten, because I didn’t notice I was supposed to make 2 loaves with the dough, and I put the whole thing into one large skillet. But it was wonderfully chewy and flavorful all the same, and my tasters loved it still warm from the pan with some of the pkhali spread on.

Here is that  recipe from a book I helped to compile, a small collection of international dishes that are cooked and served by members of each ethnic community (we are truly a pan-Orthodox group) for my church’s yearly food festival.
Himbasha
Makes two 12″ round breads
3 pounds flour
2 1/2 teaspoons instant yeast
1 tablespoon sugar
2 tablespoons vegetable oil
4 cups water, at room temperature
1 teaspoon salt
1/2 cup raisins (optional)
1. In a large bowl, whisk together flour, yeast and sugar. Dissolve salt in water. Add oil and water/salt mixture to flour mixture, and mix until you have a stiff dough. Add raisins and mix until incorporated.
2. Cover and let rise at room temperature until doubled in bulk, about 1 hour.
3. Turn dough out onto a lightly floured board. Form into one or two large circles the diameter of your frying pans and up to 1″ thick.
4. Lightly grease electric frying pan or cast iron skillet or paella pan. Heat over medium heat (about 300 degrees on an electric skillet) until a drop of water dances on it. Place dough carefully in pan, cover and cook about 15 minutes, until bottom is golden brown. Turn and cook another 15 minutes. Remove from pan and let cool on wire rack.


And at right, a photo of the last plate of pkhali I accomplished. Pomegranates were not to be found in the supermarkets in March, so I used the walnut option for garnishing.

You can see the little pieces of onion that I hadn’t minced finely enough….I thought they would overwhelm the dish, but no, it was as addictive as ever. Still, I might put the onions in the food processor with the walnuts next time.

Will I have time to make this again during Lent? Probably not — but we spinach lovers don’t need to be fasting to enjoy something so yummy.

Pasties for Cheesefare

Florentine pasties 09This recipe that has been a family favorite seems like a nice one to share this week, which for us Orthodox is Cheesefare Week, a.k.a. Butter Week, the last before Lent that we eat eggs and dairy. It was on a post about picnics that I first published it several years ago, but there’s no reason to wait for picnic season to enjoy these hand pies.

I found  the original recipe in an unusual place: a newsletter that our power company used to send with the bill, and which always included a recipe or two. They stopped this practice 20 years ago, but these pies became a tradition for me. They keep well and I think they taste best at room temperature.

Florentine pastie bittenChanges I made to the recipe below: Use butter, of course, never margarine, and add some salt to the pastry dough. Or just use your own recipe for pie dough. I don’t think I have ever included the cottage cheese in the filling; it seems as though it’s the first time I am even seeing that ingredient in the list!

I like to make the filling the day before assembling the pies. I thought of trying to use fresh spinach next time, but I don’t know how I would figure out the conversion ratio. I’ve noticed over the years that frozen spinach most often comes in 16-oz packages now, and there are fewer stems than when I used to always buy it in cardboard-wrapped blocks. I’m sure you could just use the whole 16 ounces.

Also, I would never say “pah-stees,” because my husband’s Cornish ancestors made pasties nearly every day for the men to take into the mines for their midday meal, and they pronounced the word “past-ease.” Are we to think that Florentines would say anything different?
