On the ground with the White Horse.


Last week The Garners posted about G.K. Chesterton’s Ballad of the White Horse, which caused me to dig out my cassette tapes of the author reading his own poem — how thrilling! Too bad they were made from a scratchy recording so that it’s very hard to appreciate the poem itself. Still, the directness of the connection to the very voice and person of the poet mean a lot to me.

What made me interested in the Ballad in the first place was taking a trip to Britain with daughter Pippin nine years ago. We both very much wanted to see White Horse Hill in Uffington while we were there, and we found it quite empty of any other humans the day we visited. We hiked up the hill to the chalk art that is thought to be 2,000 to 3,000 years old, and wandered around the horse’s anatomy. We couldn’t pull ourselves away. I just could not get over — here it is again — the earthy material link to ancient peoples and the mysteries of their culture and history.

One thing we share with the ancient people who carved the trenches of this design is human nature, the gifts of the Creator who made us in His image, glorious even in a tarnished condition. The horse reveals the creative aspect of that image, and Chesterton’s ballad shows his own artistry while it tells a human and Christian tale set in King Alfred’s day. The imagery in this stanza, which I think pertinent to the Lenten season, illuminates another aspect of our humanity that we share with our ancestors: the impulse to stand before God in worship, fighting with the desire to be God:

Pride juggles with her toppling towers,
They strike the sun and cease,
But the firm feet of humility
They grip the ground like trees.

Thinking again about this world history and my history, I want to revisit the horse vicariously, by means of the poem slightly more removed from the poet than my old cassettes. So I just ordered this edition of the book, which I think is the one I bought two copies of in the past for gifts. The American Chesterton Society will be sending me this CD, read by Aidan Mackey, who sounds as though he is very likely, once I put that disk in the player, to send me right back to England and White Horse Hill.

My encounter with Churchill’s friend.

Almost nine years ago I was in the middle of a Winston Churchill immersion experience, in England with my daughter who is a big fan of the man. We visited the Churchill War Rooms museum in London, his country estate at Chartwell, his birthplace at Blenheim Palace, and his grave.

One of my favorite parts of the museum was a huge collection of quotes, unfortunately displayed in an “interactive” touchscreen format so that I couldn’t easily or thoroughly access them, and I didn’t have the time to write any down, but the essence of one stuck in my mind the way a tasty seed lodges between the teeth and surprises you later on with its savor. I counted on the trusty Internet to help me find the quote after I returned home.

From London we’d taken a side trip to Chartwell, Churchill’s beloved country estate in Kent. We were in his very library, with his own books and furniture. I could just imagine him sitting there enjoying some book that had nothing to do with the government or war; this was the place he came to when he needed to decompress from the strain of his usual days.

I told the docent about the quote I had read the day before, in which Churchill had advised us to think of our books as our friends, and if we couldn’t read them all, at least we could take them off the shelves and touch the pages, and perhaps read a line or two. She didn’t know of this quote, but it was permitted to handle the books on the library shelves, so I did take one down and try to follow his advice.

It was one of those times when I just want to sit down and be there. I’d have liked to read a few lines from several books, or a chapter from one book, or see how they all were organized.  But I was so nervous about meeting this book friend that I didn’t even catch his name. I was trying to keep up a conversation with the docent, and we needed to get through the house to the grounds before the rain started….Now it seems like a fairy story that I was ever there at all.

It’s the anniversary of the death of Winston Churchill, Anna reminded me on her blog that is a compilation of “Seven Quick Takes” on him today. I was going to leave a comment on her blog about how I never could find that quote — and I had tried so hard. But then I thought, it’s been a couple of years since I searched; maybe, just maybe if I look again….

And it came up in flash, on Goodreads. One of these experiences that makes you love the Internet.

If you cannot read all your books…fondle them—peer into them, let them fall open where they will, read from the first sentence that arrests the eye, set them back on the shelves with your own hands, arrange them on your own plan so that you at least know where they are. Let them be your friends; let them, at any rate, be your acquaintances.

The last Churchill place we saw was his humble grave not far from Blenheim Palace, at St. Martin’s Church, Bladon. It was more humble then than now, as it was renovated in 2006.

Mr. Churchill, I honor you on the day of your death; may you rest in peace. One day I hope to get back and spend an hour soaking up your library and making friends with your books.

A cookie might be a little seedy bun cake.

By the time I came into my husband’s family, Seedy Buns were only a memory in the minds of the older generations. My father-in-law said they were cookies featuring caraway seeds and a treat eaten at Christmas, but perhaps he got them mixed up with Seedy Biscuits? Because a bun is bread, we all know that, whereas a biscuit can be a cookie if it is in the British Isles. But what if you take a bun and sweeten and shorten it up? Might it be like a little cake?

I never thought of a cookie as being a little cake until I read The Little Book to my children very long ago. “A cookie is a little cake,” it says right there. I know that type of cookie, and I don’t really care for them. I like mine chewy or crispy, but not cake-y.

In my joyful Christmas cookie project, which is my art at this time of year, I had the idea to make a modern Seedy Bun that would hearken back to the ancestors who brought their Cornish traditions to California.

Once a cousin had taken a box of sugar cookie mix and thrown in a can of caraway seeds to create a simple reenactment, and I scoured the Internet to see what else might be out there as inspiration.

 

 

A fascinating collection of recipes from newspapers dating 1891 to 1981 gave a hint as to the possibilities, and included two poems mentioning a grandma or an aunt making caraway cookies. Here’s one of the recipes that even claims to make a crisp cookie:

It was published in Lincoln, Nebraska in 1919, and I think is interesting for its use of the word “butterine,” which I’d never seen before.

Early American cooks also used seeds liberally in their cookies, often coriander or caraway, and I liked the looks of a glazed cookie based on one from the first American cookbook published in 1796.

Cooks are like folk-singers, changing and adapting their material freely, and it’s not as though I am looking for The Original Seedy Bun recipe to cook myself, but it would be nice to know what those cookies were like, that my husband’s grandma made.

In the meantime I decided to try this recipe for lemony cookies, calling for ground caraway seeds which I didn’t have. I tried grinding some in the blender, but they only burned from the heat, so I used whole seeds.

Some of the baked cookies were a little skimpy on seeds, like the one I picture below. I’ll have to see how everyone receives them before I decide whether to make these the same way another time. If I make a different Seedy Bun, I might bake these again as well, without the caraway, because I agree with their creator about their appealing “depth and intensity” from the lemon juice and zest.


After my Seedy Lemon Biscuits were put away in the freezer, I heard from an older grandchild of my husband’s grandmother who, I was so happy to hear, had made a collection of Grandma’s recipes, and the first cookie in the collection was indeed called Seedy Buns.

Grandma’s Recipes

COOKIES:

Seedie Buns – 5 doz. These are similar to sugar cookies.

Sift and set aside: 3 C flour, 1 t baking powder, 1/4 tsp t salt

Cream in bowl: 1 1/4 C butter

Beat in until fluffy: 1 1/4 C sugar

Add: 3 eggs one at a time, beat well after each.

Blend in: 1 t grated orange peel, 1 t vanilla, 2 T caraway seeds

Chill several hours.

To form cookies take about 1 T dough and roll into ball.

Place on lightly greased baking sheet

Flatten to 1/4″ with bottom of a glass dipped in sugar.

Bake at 375 degrees for 8-10 min., or until lightly browned.
