Moroccan lamb pie warms and charms.

In the first autumn of Gladsome Lights, I shared this old recipe for a lamb stew served as a shepherd’s pie. I haven’t had occasion to make it for a long time, but this evening when my mind turned to the kind of dishes that warm both body and soul, this one appeared.

Roasting lamb is one of those aromas that reminds me of my grandmother. Combine it with Moroccan spices, and it makes for one of my favorite dishes:

Moroccan Lamb and Sweet Potato Pie

2 tsp. ground cinnamon
4 tsp. ground cumin
3 tsp. ground coriander
2 T. freshly grated ginger
1 T. all-purpose flour (or arrowroot)
1 ½ tsp. salt, plus more to taste
¼ tsp. freshly ground pepper, plus more to taste
2 lb. lean leg of lamb, cut into 1-inch cubes
3 T. olive oil
4 T. unsalted butter
2 large onions, thinly sliced
1 T. sugar
3 large cloves garlic, peeled and minced (about 1 ½ T.)
3 c. beef stock
1 28-oz. can whole Italian plum tomatoes
2 pieces star anise
2 cinnamon sticks, about 3 inches long
2 medium carrots, peeled and cut into ½-inch rounds
2 lb. sweet potatoes, peeled and cubed
12 oz. fresh spinach (optional) washed
½ c. dried tart cherries

½ c. dried pitted prunes, cut in half freshly grated nutmeg, for sprinkling

1. In a medium mixing bowl, combine the ground cinnamon, 2 tsp. cumin, 1 tsp. coriander, flour, ½ tsp. salt, and ¼ tsp. pepper. Toss the lamb pieces with the spice mixture to coat.

2. In a Dutch oven or a large saucepan, heat 2 T. olive oil over medium-high heat. Add the lamb in two to three batches, in a single layer, and sear until dark brown on all sides, about six minutes per batch. Add the remaining T. olive oil during searing if pan becomes dry. Remove the lamb pieces and set aside.

3. Reduce heat to medium; add I T. butter. Add onions and sugar; cook 10 minutes, stirring frequently, scraping up brown bits on bottom of pan while stirring the onion.

4. Reduce heat to medium low, add the minced garlic, and cook until brown and well caramelized, about 15 minutes.

5. Stir in the stock, tomatoes, star anise, cinnamon sticks, carrots, remaining 2 tsp. cumin, 2 tsp. coriander, the fresh ginger, remaining 1 tsp. salt, and reserved lamb. Bring to a boil, reduce heat to medium, and simmer, stirring occasionally, uncovered, for about 1 hour, until lamb is tender and sauce is thick.


6. Meanwhile, place sweet potatoes in a large saucepan; cover with cold water. Bring to a boil, reduce heat to medium, and simmer, uncovered, for 15 minutes, until very tender when pierced with a fork. Drain potatoes, and return to saucepan. Dry potatoes, over medium heat, for 1 minutes. Pass potatoes through a food mill into a medium bowl. Stir in remaining 3 T. butter; add salt to taste. Set aside, loosely covered.

7. Preheat oven to 325 degrees. If using spinach, place in a large skillet over medium-high heat. Season to taste with salt and pepper, cover, and cook until wilted, about 1 ½ minutes. Drain, and rinse under cold water to stop the cooking. Set aside.

8. Remove the star anise and cinnamon sticks from the stew. Stir in the cherries and prunes. Transfer mixture to a deep 2-qt. Casserole, and place a layer of spinach, if using, over the stew. Spoon the sweet potato mixture onto the stew. Place on a baking sheet, and bake for 30 minutes. Sprinkle with freshly grated nutmeg.

Notes: I have always used a whole boneless leg of lamb for this recipe, which usually is about 5 lb., not 2 lb., so I end up with more than 2 times the quantity. You can see  I have two pots of the stew simmering.

This gives me plenty to put in the freezer for another day, which raises the question of how to prepare the yams. If I purée all the yams, they end up getting  mushed up into the stew by the time I have reheated it, especially if it spends time in the freezer.

The stew tastes especially nice if the flavors have blended overnight, so I try to cook it a day ahead. Also this time I baked ahead of time the sort of monster yams, not very sweet, that are in the discount supermarket around Thanksgiving, not knowing yet how I would arrange everything the next day. Sometimes I have baked smaller sweet potatoes and served them to the side of the stew…

…but on this occasion, I ended up slicing them on top, brushed with butter and sprinkled with parsley and cinnamon, to take to a potluck. Sorry, the photo shows the dish before it had its final heating in the oven, and the butter is still solidifying on the cold yams. That evening the yam slices were gone before the stew itself.

In this season of my life, I don’t have a crowd to feed every day, but I think if I made a big pan of this stew I might be able to find enough friends to eat with me, and fortify ourselves against the coming winter. Next I’ll consider what other fallish items would fill out the menu… How about a dessert pie?

gl half tsp 4Because of the strange and wonderful arrangement of me having two housemates to share my big house, my kitchen is a warmer and livelier place than it would be otherwise. Kit has her favorite mugs and her red teapot that she frequently fills, and a collection of tea that has swelled my original holdings to bursting.gl kitchen scene 4-16

The tins are mine, special because they used to sit on my grandma’s kitchen shelf. I don’t remember what she kept in them, but I keep tea.

Mrs. Bread gave me a cape violet, which has blooming offspring now, bgl violet P1030899(1)ut this flower is on the original plant, which is not a frequent bloomer for me, but because of that each flower is even more exquisite and precious. Every kitchen should contain something growing, and at least occasionally blooming, don’t you think?

We women all like to cook (though I must admit to cooking much less than I find myself eating what Kit cooks), and Susan seems to like to clean up — at least, she does it a lot. One thing I made recently didn’t require cooking: a vegan chia seed pudding which I found on Minimalist Baker. I’ve made it twice, and the second time I also created a pumpkin-spice version that has yet to be perfected. We really like the chocolate one, but variety is nice.

While concocting these nice jars of breakfast or anytime-food, I used measuring spoons from different sets, and noticed a discrepancy in the size of the half-teaspoons. gl half tsp 3The one on the right above is Oneida brand, and it is almost a whole teaspoon, as I found out with the agl half-tsp measure cupsid of a medicine cup. The one on the left is new and relatively inexpensive, and it seems to be just right, while the one in back is probably a hundred years old, and it seems to be a little less than a half-teaspoon. I often have wondered if the really old measuring spoons have had their edges worn down over the decades…. But what am I to think of this overall lack of standardization?

Kit says she has been semi-consciously avoiding that bigger spoon when she needs a half-teaspoon, and now we know why it — it isn’t what it purports to be! Are even our measurements getting supersized?gl pudding 4-16 chia

We seem to be focusing on brown and orange foods lately. The chocolate pudding is brown, of course. And the light and crispy sesame flax crackers that we’ve made three batches of. That recipe comes from a library book, Food 52: Vegan by Gena Hamshaw. Moving on toward orange, Kit made carrot-ginger soup with cashew cream for a topping.

But for sheer elegance, I present one of my favorite foods, whose presence in the kitchen is to me always either promising or comforting. It takes so little effort to cook, and is versatile and healthy. It is what I call a yam. If you do a little research on what is a yam and what is a sweet potato, you might go a little crazy with the impossibility of being both botanically correct and a non-weird member of your local culinary culture.

So, my recommendation is to just call it what you always call it. I love all the sweet potatoes I’ve ever cooked and eaten, but for some reason I buy this Garnet Yam more often. Here is the last piece of yam from the recent batch I baked. It’s time to put a few more into the oven, to make this rainy day warm and nourishing.

This chock-full week in June…

In church, we will soon be celebrating Pentecost, on the 23rd of June. Last night was the Leavetaking of Pascha service that I love, the last time we would sing “Christ is risen from the dead, trampling down death by death!” in the services until next Pascha. Tonight the Feast of Ascension began; until Pentecost we greet once another with “Christ is ascended!” and the response is, “From earth to heaven!”

Between now and October 1st our parish has many feast days, so our team of communion bread bakers has a busy season ahead. Yesterday three of us worked at making the large loaves used in the altar, and the photos show some of my efforts.

At home I’m reveling in glorious vegetables. In the last few days I’ve juiced lots of vegetables raw, and also made big batches of kale and Turkish Green Beans and stir-fried Asian vegetables.

My recent favorite way to cook sweet potatoes or yams is to roast them at 450° or 500° with coconut oil and curry powder. I don’t measure anything, and have used varying amounts of all the ingredients — also different blends of curry spices, plus a little salt. It doesn’t seem to matter if I stir the spices in at the beginning or partway through the baking. I bake them till they are tender. And then I eat them like candy.

Pippin sent me a link to this photo journal of grandmas around the world and the food they cook. I am considering what dish I might pose with were I asked to participate, and what clothes I could wear that would make me look half as cute as the Bolivian grandma in the collection….you’re right, it would take more than clothes. I love the way the women arrange the ingredients so artfully in the “before” photos. An example is below.

From our son Soldier we got a link for a short film you can watch online (less than 15 minutes), about a man in the mountains of Ecuador who is The Last Ice Merchant. It’s always a joy to see footage of a human soul taking satisfaction from hard work well done.

But progress means that people can get factory ice cheaply and the old-style ice he sells has become a specialty item. It’s not likely anyone will want to take up the cause of nostalgia once he is gone. But I wouldn’t be surprised if the ice he hauls down the mountain is sweeter than the cheap and more convenient blocks.

Another man whose character inspired me this week by way of the movie “Searching for Sugarman” is Sixto Rodriguez, a singer whose music never took off in the U.S. His two records failed to sell, and he lived simply and humbly for decades after, not knowing that his music was hugely popular and motivating and successful in South Africa. When his fans there discovered that he wasn’t dead as rumored, they brought him to that country to do several concerts.

Suddenly he is famous — but he didn’t lose his endearing simplicity and generosity. I was impressed at how he seemed to have passed his gentle spirit on to his daughters who are also introduced in the film. I liked all but one person in this documentary, and I liked Rodriguez’s voice very much, and a couple of his songs.

There you have my happy hodgepodge. Oh, and here is what my Mother’s Day lily looked like when we got back from Oregon.

Biscuits and Buns

In this post I will share two recipes I’ve had waiting in my Recipes-to-Try folder, and recently did get around to. I loved them both.

I found Brazilian Cheese Bread here at The Traveler’s Lunchbox. The Portuguese name is Pão de Queijo. These little buns are said to be very popular with coffee for breakfast in Brazil. (The picture at left is not of these rolls. I was afraid that if I didn’t put a colorful picture there you might not keep reading. That picture is of the biscuits I tell about further down.)

There are many recipes for the cheese buns around, with different ingredients and techniques (This one at the San Francisco Examiner looks plausible), but I will tend to stick with the Lunchbox version, as mine came out so good. One thing non-traditional in that recipe is the use of butter rather than oil. And I do love butter. I did cut down on the salt in my recipe, by 50%.

They are quite unusual, in that they are made with tapioca starch rather than flour, and therefore are gluten-free, and chewy.

The first picture I took was of the sticky dough that one puts little globs of on parchment paper. This is the unappetizing stage. But just be patient.

The rolls puff up as they bake, and while mine did come out with some “horns” and such like, they were oh-so-tender and light, while at the same time moist and tasty. I noticed that the Examiner recipe does have you make balls of the dough, which would reduce the prickly nature of the crust somewhat. But my dough was not firm enough for that.

The thin crispy crust broke open to reveal an interior that was not doughy at all, but very cheesy, with a stretchy “crumb.” No need for extra butter or anything. One eater said they were “intense.”

We all noticed the likeness to mochi, the Japanese term for food that is chewy like this and often made with a highly-refined rice flour called mochiko. I think if you like mochi-anything, you would love these buns. I’ll tell you more about mochi in another post.

Mr. Glad doesn’t like mochi, and he didn’t like the Brazilian Cheese Breads. Too bad.

I put the leftovers in the freezer, even though the original recipes say to only bake as many as you need and to freeze the balls instead, etc. This morning we put them in the microwave for a few seconds and they came out quite delicious.

The other recipe I tried last week was Sweet Potato Biscuits. I would be happy to live off sweet potatoes, and because they are almost nutritious enough for that, I like to use them in as many ways as possible.

I was a bit skeptical about how flaky a biscuit could be with the addition of vegetables, but they passed that test. Buttermilk biscuits have been my standby, so these were sweet by comparison, but not overly so. They were enjoyed by all. [lost the recipe somehow while trying to edit it at a later date. Sorry.]
